Dinner Inspiration
10:04:26 Oct 3rd 09 - Archangel Argyle:

I need inspiration, I hate the situation that rises when it's time for dinner, and the only thing you can think of is either sausage, or pizza.

So, I want recipes, images, food titles, good combinations but not necessary a course. Anything that can help me be a better chef in the kitchen! Videos are also OK =)

remember to stay on topic!

Make your own pesto, its cheap and easy. And tastes delicious.
1 cup of basil leaves, 30 grams pine nuts, teaspoon olive oil, 2 cloves garlic - blended together. Then stir in 60 grams parmisan cheese. Stir through angel hair pasta.

My mother served a great dish yesterday,

pork fillet - fried as one piece, then sliced in ~1cm pieces.

extruded/stamped potatoes

sause is most important, it's made from the gravy of the pork fillet, one might add some extra water after the frying is done. And then add cream (base), then add great deal of mustard and parsley and onion, taste of with salt and pepper.

My lasagna, yummy...

One pound spicy italian sausage, one pound hamburg, two pounds mozzerella cheese, one pound ricotta cheese, oregano, parsley, garlic, chili powder, fresh pressed tomato paste, little bit of salt, pepper, sugar for sauce seasoning.

1. Fry together the sausage and hamburg, when browned, add the sauce, and allow to simmer (leave a bit of sauce on the side).

2. Boil the noodles until tender (al dente if you prefer), lay in a single layer along the bottom of a 9x13 pan. (layer the bottom of the pan with a little of the extra sauce, prevents burned on noodles).

3. Layer as such, noodles-meat and sauce-ricotta-mozzerella, then start with the noodles again, usually makes 3-4 layers depending on how deep the dish is. End the layering with a noodle top. Use rest of extra sauce to lightly brush the top layer of noodles, then use remaining mozzerella to cover top layer.

4. Bake in 400 degree oven for 30-40 minutes.

This will leave the top layer of noodles extra crunchy with a delicious baked cheese layer, which I love, if you dont, leave out the top layer and just end with cheese.

Warning, this makes on 9x13 lasagna, it is a lot of ingredients, you can usually get about 9-12 pieces out of it, but each piece will weigh about 3/4-1 pound lol. You will have leftovers, and therefore, dinner for the next week =)

Meaning you don't need to come back here for a week =)
