VU recipe corner Salmon |
02:03:00 Jul 29th 09 - Mr. Lithium:
- 24 ounces fresh skinless, boneless salmon, thinly sliced
- Kosher salt to taste
- Juice of 1 lime
- 1 x scallion, thinly sliced on a bias
- 1/4 bunch chives cut into ½ inch batons
- 1 x granny smith apple sliced thinly on a mandolin
- red onion, shaved thinly on a mandolin
- 2 tbsp mustard oil
For the Ceviche- Toss the salmon with
the salt and let the salt dissolve into the salmon before tossing in
the lime juice. Let rest for 1 minute to let the lime juice cure the
salmon and let the salmon become pale. Take 75 percent of the apple
slices and cut into batons, reserving the other 25 percent for garnish.
Toss in the apple batons, scallions, red onion, and chives. Place the
ceviche on the plates and garnish with dollops of the horseradish
cream. Garnish with remaining slices of apple slices and serve with the
sage salt on the side.

Dang, the machine's broken! I think what penor is trying to say is that he DOESN'T like salmon. I just had salmon for dinner in fact, actually. I like the idea of a recipe corner, but I don't think people like Penor can handle the sweet flavors that chefs can produce.
Sorry Penor. I'll ask that crazy old scientist to come out of the basement 'labratory' a.k.a. tourture chamber and fix it for me.

I cant , lol I have a protein issue where too much red meat makes me have attacks of arthritis, so I am eaiting more fish now. btw I had an amazing red snapper yesterday grilled with a wasabi butter .

Nice, the fresh Dill would be sweet, I also like a slow roasted whole fish stuffed with onions, capers and slices of apple and lemon.
The thing about Salmon is that its very vesatile, although I know people who consider it to be poisonous. LMAO

Spicy Salmon and Eggplant
-
3 fresh salmon steaks 1 eggplant 3 limes 2 lemons 1/8 cup olive oil 1 tsp. Greek or Italian seasoning 1/8 tsp. hot red pepper flakes Fresh ground black pepper
- Remove stem and end of eggplant and slice on a diagonal, cutting slices approximately 1/4-inch thick.
- Place salmon steaks and eggplant slices in a large, flat Tupperware container.
- Cut lemons and limes in half and remove juice.
- Pour juice into a separate bowl.
- Stir in olive oil, seasoning, pepper flakes and ground pepper.
- Pour over steaks and eggplant.
- Cover and marinate in refrigerator for 1 to 1-1/2 hours.
- Turn steaks over and rearrange eggplant for even marinading, once during process.
- Place steaks on a hot grill and cook on both sides until done.
- Add eggplant slices to grill when fish is half cooked.
- Grill eggplant slices on both sides.

Ingredients
- 1 1/2 pounds sushi grade fresh salmon, skin removed
- 1 cucumber
- 4 tablespoons finely chopped shallots
- 2 tablespoons finely chopped fresh dill
- 4 tablespoons finely chopped fresh chives
- 1 tablespoon capers, coarsely chopped
- 3 tablespoons lemon juice
- 6 tablespoons mayonnaise, preferably homemade
- 12 cherry tomatoes, sliced in half
- 4 leaves endive, for garnish
Directions
Cut salmon in small pieces, about 1/4-inch thick. Set aside or cover and refrigerate until ready to serve.
Slice cucumber into very thin (almost transparent) rounds and set aside.
In a medium bowl, mix together the shallots, dill, chives,
capers, lemon juice, and mayonnaise. Cover and refrigerate if not using
immediately. Just before serving, add the tomatoes to the mayonnaise
mixture and stir to combine.
On a serving plate, spread the cucumber to cover 2/3 of the
plate, leaving a space in the center of the plate. Spread the
mayonnaise mixture in the center of the plate and then arrange the
salmon over the cucumber. Garnish with endive pieces around the edges.

Salmon in a Vodka Cream Sauce
Ingredients:
8 tablespoons butter 1 onion, thinly sliced 1 pound spinach 6 6 ounce salmon fillets salt and freshly ground pepper 3 tablespoons olive oil 1 1/2 cups whipping cream 1/2 cup vodka 2 tablespoons green peppercorns in water, drained and crushed 3 tablespoons fresh lime juice 1/4 cup snipped fresh chives
Directions:
Preheat
oven to 350F. Combine 4 tablespoons butter and onion in large Dutch
oven. Cover and bake until onion is golden brown, stirring
occasionally, about 45 minutes.
Stir spinach into onion and bake until just wilted, about 3 minutes. Remove from oven; keep warm.
Season salmon with salt and pepper. Heat oil in heavy large skillet
over high heat. Add salmon in batches and cook about 3 minutes per side
for medium. Transfer to platter. Tent with foil to keep warm. Pour off
excess oil from skillet. Add cream and vodka and boil until slightly
thickened, about 4 minutes. Add green peppercorns and remaining 4
tablespoons butter and stir until butter is just melted. Mix in lime
juice, season with salt and pepper.
Divide spinach and onion
mixture among plates. Top each with salmon fillet. Spoon sauce over.
Sprinkle with snipped fresh chives.

smoked salmon lemon coconut cream sause paprika spring onion
spices u can use : salt, pepper, sweet curry, basel
this is a really simple dish, I dont really know if it is a dish, but it works out great when u have no time to make food, its easy and tasty. and u can basically just take what u have in ur fridge, the salmon can be swapped out with chicken, beef or just use vegetables, can serve with bread, pasta or rice

u get it on cans, in most stores nowadays I think,..
just need a small bx tho, and if u have nothing laying around, can always use milk and just add a sppn of flour or two to make it into sauce :) (beofre u add things in it tho)

Wow, I gotta try all these recipes, they sound amazing! Especially the coconut sauce one, cause it has paprika which is my favorite spice, that's why i love deviled eggs.

just found what im gonna cook tonite
2 large salmon fillets
2 tablespoons of capers
shallots
honey
pepper
green onion
one large spig of dill
homemade extra thick mayonaise
garliuc butter
place fillets on tin foil with garlic butter spread on it, wrap airtight and cook for 15 minutes then combine other ingredients in bowl mix thoroughly and spread on fish, cook for another 5 minutes

the Ceviche is 1 lb of king scallops, two salmon fillets but cut form the tail section and belly, 6 key limes and 1 large grapefruit, 2 table spoons of cider vinegar and sea salt to taste. combine ingredients and let stand for 1 hour, the acid "cooks" the fish. then serv on bed of wilted spinach and dress with rasberry vinagrette.
