"This city has 663 peasants and 193 of them are looking for a place to work".
I have 22 farms under construction. 22 farms give 110 jobs, leaving 83 peasants jobless.So i could build another 16 farms without effecting production, that is correct, right?

I'm having a small mental block at the moment.

But keep in mind more peasants will come in by the time those are finished ;)

Does anyone have the formula for peasant growth rate? So i can build the exact amount of jobs/houses to last untill i next log on. Optimal performance, yaknow.

Well you should build at a 1:5 ratio [1 home: 5 production buildings]...that will end up with 100% employment as 25 pezzents work in 1 production building

Edit: Also, build taverne in your cities..they increase your population growth. You will only need about a few hundred.

That isn't what he meant... He wants to know how fast
peasants come per house and how much that slows with number of
buildings in that particular city. And so do i (I did have the exact
formular 1.5 - 2 years ago but lost it in a hard drive failure)

You need to add 10% onto the Pes looking for work and build accordingly as well as the 16 farms

it depends on how many homes you have will tell you how many peasonts come each tick.  Or do like I do Message General Wolfenstien.  You just tell him how many homes you have in the city and he can come up with a round about figure on how many peasonts you get every tick.
